Eazy Peazy Potato Salad

An inexpensive and delicious meal isn't too hard to find, because I will be showing you some in the coming posts, but a dish THIS delicious and THIS inexpensive deserves some recognition. Potato Salad is the vice president of the American BBQ, a laughably easy way to get children to consume vegetables, and also a dish they make in Germany hot, or so I heard. I don't like to think of that last one, so I'll go back to the first point.

Make this dish for a BBQ, party, potluck, Christmas, or make a regular weeknight a whole lot more tasty. This particular recipe is really called Ensalada Rusa, so a Russian potato salad recipe that was given to me from a Dominican lady that made it every single night for her family. I kid you not, and it's by far the best potato salad I have ever had.



Ingredients

3 large potatoes
2 medium carrots
1/4 of a whole onion, not chopped
1 clove garlic
3/4 cup peas (I used frozen)
2 tbsp mayo (You may need a little more to your taste)
1 tbsp sour cream
fresh water
salt, pepper

1. Wash, peel, and cube potato and carrot.
2. In a pot of fresh water, add the salt, onion, and garlic, bring to a boil.
3. Once boiling add in carrot, when carrot begins to just soften, add in potatos.
4. When potatoes are semi-softened, add peas. Stir or whistle until the potatoes and carrots are fork tender but not mushy.
5. Drain the pot, discard the garlic and onion or save for something else.
6. In your serving bowl drop in the mayo and sour cream. Then everything else. Combine.
7. Taste for salt and pepper, I sometimes add a little cayenne here. Serves 5
